Recipe Challenge

I need some new quick recipes. I am tired of my repetitive tried and true...I need some more variety.

What are some quick, throw together, favorites in your house??

I have allowed annoymous comments for this post. Those of you who read but can't comment...better. Maybe I will even award a price for most recipes submitted...

I'm not a cook, that's for sure...but for nights where we need a quick supper, I like shaved deli meats, lettuce, thin-sliced cheddar, sliced tomatoes...throw it all in whole-wheat tortillas with a little salad dressing. Even my picky Kylie likes wraps.

And I always have soup and bread in my freezer for cool nights.

Greek Salad:

Red Onion
Red Pepper
Yellow Pepper
Green Pepper
Cucumber
Tomato
Olives
Fetta Cheese
CHOPPED AND THROW IN A BOWL

Mix Olive Oil and Red Wine Vinegar and Italian Spices to prefered taste pour over chopped veggies, toss and eat. YUM. Love Dana

Here's Another;

Broccoli and Cauliflower Yumminess

Cut Broccoli and Cauliflower
Add Butter
Crumble Feta Cheese

Wrap in Tin Foil bake in Oven at 350 Flipping Occasionally Until Veggies are Soft.

Yum So Delish

OK, I found another recipe in a waiting room magazine and thought of you:

6 chicken thighs
1 potato
1 yellow pepper
1 red pepper

Preheat oven to 400F. Place chicken thighs on a rimmed baking sheet. Quarter the potato and throw on the sheet. Drizzle with olive oil, sprinkle with Italian seasoning and salt and pepper. Toss to coat. Roast 20 minutes. Slice peppers and add to pan. Toss all together. Roast for another 20-25 minutes.

**I'm going to try this, but definitely add more potatoes and veggies! I don't know why they would have 6 thighs and only one stinkin' potato.

"Cooking for the Rushed" Shepherds Pie

900g ground beef
2/3c ketchup
2.5tsp Worcerstershire sauce
1.5 Mrs Dash Original
1c from Peaches and Cream corn
1 can cream style corn
2c instant mashed potate flakes
(remember to have butter and 1% milk on hand)
Make ahead choice: Peel and thinly slice 4 potatoes, boil and mash with milk

Preheat oven to 375
Brown meat
Add ketchup, Worcestershire sauce and spices to cooked meat
Boil water in kettle
Por meat mixture in oven safe pan or casserole
Rinse frozen corn and spread over meat
Spread the creamed corn over frozen corn
Prepare mashed potatoes according to package
Top casserole with mashed potates
Bale in over uncovered for 40min
When timer rings, broil for a few minutes
